Muffins of Love

I needed to tweet something to confuse the twitter algorithms and posted a photo of a muffin, that I made some time ago.

Apparently many people wanted to know the recipe because it looks yummy. Well, it’s a family secret recipe but I will share with you because we – all humans are family, and we need nice things. What nicer than a muffin made by you for yourself and the people you love.

Muffins of Love

1/2 cup (100g) of sugar
1 egg
90 ml of yogurt (I prefer whole/full fat)
1 cup (136g) of flour
1 teaspoon of baking powder
pinch of salt
1/4 cup (60ml) of vegetable or sunflower oil
vanilla (2 x 8 g packets vanilla sugar and 1 x 8 g packet bourbon vanilla sugar)

Mix first the egg and the sugar. When getting creamy consistency, add the yogurt in which was dissolved the baking powder. After it add the oil and salt. Since the size of the egg and liquidity of the yogurt may vary add the flour gradually. When you pour with a spoon a little of the batter, there should be a trace which dissolves a bit after it (this video could be helpful in case you don’t have much of experience). Put in muffin forms. Now is time for the topping.

Lidiya’s secret (not anymore) streusel topping

2 tablespoon of flour

4 tablespoons of sugar

1 table spoon of sunflower or vegetable oil

Mix all. The aim is to make wet sand like consistency. The secret: add crushed nuts. I love it with almonds and walnuts. Add a pinch of bourbon vanilla sugar, and you will thank me until the end of your life for it. Put a generous amount over the muffins. Make more if you want. Now bake at 200 °C (~ 390 °F) for about 20 minutes. You will get about 8 muffins from it. *It works as a regular cake too, just pour it in a medium size round pan 9 x 2.75 in. (22.9 x 6.9 cm). *If you add in the batter some frozen berries and especially cranberries, I am sure that you won’t want it any other way. The berries could be added to ready to bake the batter (mix slightly) or after is in the muffin forms. Works excellent both ways.
